My first blog post was about avocado fries. Well, I now have a new favorite – asparagus fries. On a recent visit to Nick’s on State in Carlsbad, my husband and I tried the asparagus fries. Wow – what an award-winning dish!
I have read that you can either bake them or air fry them for optimal crispness – without destroying the freshness of the asparagus. Ours were just so perfect and with no hint of grease.
Ideally, first coat the trimmed asparagus with flour, dip in egg and then roll in a mixture of panko bread crumbs, grated Parmesan and salt & pepper before cooking. Either bake in an air fryer (385 to 400 for 7 to 8 minutes) or in the oven (425 for 10 to 15 minutes).
I am not usually a fan of ranch dressing but Nick’s buttermilk ranch was a winner. Below is a recipe for a classic version:
Homemade Ranch Dressing
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
1 teaspoon lemon juice
1 teaspoon finely chopped dill
1/2 teaspoon finely chopped parsley
1/2 teaspoon finely chopped chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Enjoy!
